Description

A refreshing summer salad that combines juicy watermelon with zesty lime and fragrant mint, perfect for hot days.


Ingredients

  • 4 lbs (about 6 cups) seedless watermelon, cut into small chunks
  • 1/4 cup fresh lime juice
  • 1/2 cup mint leaves, roughly chopped
  • 1/41/2 teaspoon salt, or to taste
  • Cayenne pepper, to taste
  • 1/2 cup diced cucumber (optional)
  • 1/2 cup diced berries (optional)
  • 1/4 cup juice for added flavor (optional)

Instructions

  1. Combine the watermelon chunks and diced cucumber in a large bowl.
  2. Squeeze in the fresh lime juice.
  3. Toss in the roughly chopped mint leaves.
  4. Sprinkle in the salt and cayenne pepper to taste.
  5. Gently toss all ingredients together until well blended.
  6. Chill the salad in the refrigerator for about 1 hour, or serve immediately at room temperature.

Notes

This salad can be made a few hours in advance. Store in an airtight container in the fridge for up to 2 days.
