A refreshing summer salad that combines juicy watermelon with zesty lime and fragrant mint, perfect for hot days.
Ingredients

- 4 lbs (about 6 cups) seedless watermelon, cut into small chunks
- 1/4 cup fresh lime juice
- 1/2 cup mint leaves, roughly chopped
- 1/4–1/2 teaspoon salt, or to taste
- Cayenne pepper, to taste
- 1/2 cup diced cucumber (optional)
- 1/2 cup diced berries (optional)
- 1/4 cup juice for added flavor (optional)
Instructions
- Combine the watermelon chunks and diced cucumber in a large bowl.
- Squeeze in the fresh lime juice.
- Toss in the roughly chopped mint leaves.
- Sprinkle in the salt and cayenne pepper to taste.
- Gently toss all ingredients together until well blended.
- Chill the salad in the refrigerator for about 1 hour, or serve immediately at room temperature.
Notes
This salad can be made a few hours in advance. Store in an airtight container in the fridge for up to 2 days.
